Classic Cream Scone

Directions

    • 2 cups flour
    • ¼ cup sugar
    • 2 teaspoon baking powder
    • 1/8 teaspoon salt
    • 1/3 cup unsalted butter
    • ½ cup cream
    • 1 egg
    • 1 ½ teaspoon vanillaPreheat oven to 425
    1. Sift together flour, baking powder, sugar and salt.
    2. Cut butter into into the above ingredients using a pastry blender or 2 knives until the size of small peas.
    3. Beat eggs in a separate bowl.
    4. Reserve 2 tbsp. of this mixture.
    5. Add to the remainder and beat in cup cream.
    6. Make a well in the dry ingredients.  Pour the liquid into it.
    7. Combine with a few swift strokes.  Handle the dough as little as possible.
    8. Place it on a lightly floured board.  Pat until ¾ inch thick.  Cut with a knife into diamond shapes.  Brush with whipping cream.
