Carmel Apple Pecan French Toast

    • 6 eggs
    • 1-1/2 cup milk
    • 1 teaspoon vanilla
    • 1 teaspoon ground cinnamon
    • 1 teaspoon ground nutmeg
    • 1/2 teaspoon salt
    • 1 cup brown sugar
    • 1/2 cup butter
    • 2 Tablespoons maple syrup
    • 1 loaf day old French bread
    • 1 cup pecan halves
    • 1 apple, chopped

    Melt brown sugar, maple syrup and butter in sauce pan.  Heat until sauce takes on a froth-like consistency.  Pour mix into casserole dish.  Spread chopped apples and pecans evenly over mix.  Cut french bread into approximately 1 inch thick slices and lay over mix.  Combine eggs, milk, cinnamon, nutmeg and salt in bowl.  Blend well and pour over top of mix in casserole.  Bake at 375 degrees for 45 minutes.  Take toast out of oven and turn over onto cookie rack.  Bake for 15 more minutes.  Serves 8 to 10.
